Taiwanese Dumpling Soup Recipe

Taiwanese dumpling soup, also known as "jiǎo zǐ tāng" in Mandarin, is a popular comfort food in Taiwan that warms the hearts and bellies of many. This traditional recipe is a staple in Taiwanese cuisine, made with tender dumplings filled with a mix of ground pork and vegetables, served in a savory broth. For the dumplings:

2 cups all-purpose flour

2 tablespoons salt

1/4 cup warm water

Instructions

Step 1: Make the Dumpling Dough

In a large mixing bowl, combine the flour and salt. Gradually add in the warm water and mix until a dough forms. Knead the dough for about 10 minutes until it becomes smooth and elastic. Cover the dough with plastic wrap and let it rest for 30 minutes.

Step 2: Prepare the Filling

In a separate mixing bowl, combine the ground pork, chopped cabbage, scallions, garlic, soy sauce, sesame oil, and cornstarch. Mix well until all the ingredients are well incorporated.

Step 3: Assemble the Dumplings

Divide the rested dough into small balls, about the size of a small egg. Roll out each ball into a thin circle. Place a tablespoon of the filling in the center of each circle. Fold the dough over the filling to form a half-moon shape, and press the edges together to seal the dumpling. Repeat with the remaining dough and filling.
