Serbian Vegetarian Djuvec Recipe

Vegetarian Djuvec is a flavorful and hearty dish that showcases a variety of vegetables and rice, making it a perfect one-pot meal. Here’s a simple recipe to prepare this delicious Serbian dish without meat.

Ingredients

- 1 cup rice (preferably long-grain or basmati)

- 2 tablespoons olive oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 bell pepper (red or green), diced

- 2 medium carrots, diced

- 1 zucchini, diced

- 1 cup green beans, trimmed and cut into pieces

- 1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)

- 3 cups vegetable broth

- 1 teaspoon paprika (sweet or smoked)

- 1 teaspoon dried oregano

- Salt and pepper to taste

- Fresh parsley, chopped (for garnish)

Instructions

- Wash and chop all the vegetables into bite-sized pieces.

-  In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

-  Stir in the diced bell pepper, carrots, zucchini, and green beans. Cook for another 5-7 minutes until the vegetables start to soften.

-  Add the rice to the pot and stir for about a minute to lightly toast it. Then, add the diced tomatoes, paprika, oregano, salt, and pepper. Mix everything well.

- Pour in the vegetable broth, ensuring that all ingredients are submerged. Bring the mixture to a boil.

- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.

-  Once cooked, taste and adjust the seasoning if necessary. If the dish is too dry, you can add a little more broth or water.

- Garnish with fresh chopped parsley before serving. Vegetarian Djuvec can be enjoyed on its own or with a side of crusty bread.
