Ingredients
- 1 cup rice (preferably long-grain or basmati)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper (red or green), diced
- 2 medium carrots, diced
- 1 zucchini, diced
- 1 cup green beans, trimmed and cut into pieces
- 1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)
- 3 cups vegetable broth
- 1 teaspoon paprika (sweet or smoked)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Wash and chop all the vegetables into bite-sized pieces.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced bell pepper, carrots, zucchini, and green beans. Cook for another 5-7 minutes until the vegetables start to soften.
- Add the rice to the pot and stir for about a minute to lightly toast it. Then, add the diced tomatoes, paprika, oregano, salt, and pepper. Mix everything well.
