Bulgarian Vegan Potato-Stuffed Peppers

This delicious recipe for Bulgarian Vegan Potato-Stuffed Peppers is a hearty and flavorful dish that showcases the simplicity and richness of plant-based ingredients. These stuffed peppers are sure to please everyone at the table.

Ingredients

20g olive oil 

1 large onion 

600g potatoes 

Salt and pepper to taste

2 tsp smoked paprika 

1-2 tsp summer savory 

1 tsp ground fenugreek 

5 large red peppers

Directions

- Prepare the Filling: Heat the olive oil in a large frying pan over medium heat. Peel and cut the potatoes into small cubes. Add the potatoes to the pan and fry until they soften slightly, about 5-7 minutes.

- Add Spices: Finely chop the onion and add it to the pan with the potatoes. Cook until the onion is translucent. Then, add salt, pepper, smoked paprika, summer savory, and ground fenugreek. Stir the mixture for a few minutes to allow the spices to infuse.

- Stuff the Peppers: While the filling is cooking, prepare the red peppers by cutting off the tops and removing the seeds. Spoon the potato mixture into each pepper until they are full. If you have any leftover filling, you can cook it alongside the stuffed peppers.

- Bake the Peppers: Place the stuffed peppers on a baking tray. Bake in a preheated oven at 200°C (about 400°F) for 20-30 minutes, or until the peppers begin to brown. For softer potatoes, you can bake them a little longer.
