Sandesh Recipe
Sandesh is a popular Bengali sweet dish that originated in the eastern Indian state of West Bengal. It is a sweet, creamy, and soft dessert made from milk, sugar, and ghee (clarified butter). Sandesh is often served at special occasions and festivals, and its unique flavor and texture have made it a beloved treat among Bengalis and non-Bengalis alike.
Ingredients
1 liter full-fat milk
1/2 cup sugar
1/4 cup ghee (clarified butter)
1/4 teaspoon cardamom powder
Pinch of salt
Optional: nuts, dried fruits, or flavorings like saffron or rosewater
Instructions
Step 1: Boil the Milk
Boil the milk in a heavy-bottomed pan over medium heat until it reduces to half its original volume. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
Step 2: Add Sugar and Ghee
Add the sugar, ghee, cardamom powder, and salt to the reduced milk. Stir well to combine.
Step 3: Cook the Mixture
Cook the mixture over low heat, stirring constantly, until it thickens and reaches a consistency similar to that of soft cheese. This should take around 20-25 minutes.
Step 4: Shape the Sandesh
Remove the pan from the heat and let it cool slightly. Use a spoon or your hands to shape the mixture into small balls or patties. You can also shape them into various forms like squares, triangles, or even animals.
Step 5: Chill and Serve
Let the Sandesh cool completely, then refrigerate them for at least 2 hours or overnight. Serve chilled, garnished with nuts, dried fruits, or a sprinkle of cardamom powder, if desired.
Tips and Variations:
- Use high-quality milk and ghee for the best flavor and texture.
- Experiment with different flavorings like saffron, rosewater, or nuts to create unique variations.
- Sandesh can be stored in an airtight container in the refrigerator for up to 5 days.
- You can also freeze Sandesh for up to 2 months and thaw them when needed.
