Holubsti (Stuffed Cabbage Rolls) Recipe

In Ukraine, one dish stands out as a national treasure, a culinary symbol of love, family, and tradition: Holubsti, or Stuffed Cabbage Rolls. This beloved recipe has been passed down through generations, and today, we're excited to share it with you.

Holubsti, which translates to "little pigeons" in Ukrainian, has its roots in medieval Eastern Europe. The dish was born out of necessity, as peasants would use cabbage leaves to wrap around a filling of ground meat, rice, and spices, creating a hearty, filling meal. Over time, Holubsti became a staple of Ukrainian cuisine, often served at family gatherings, holidays, and special occasions.

The Recipe

Servings: 8-10

Ingredients:

For the filling:

- 1 lb ground pork

- 1 lb ground beef

- 1 onion, finely chopped

- 1 cup cooked rice

- 1 tsp salt

- 1/2 tsp black pepper

- 1/2 tsp paprika

- 1/4 tsp cayenne pepper

- 2 tbsp tomato paste

- 2 tbsp chopped fresh parsley

For the cabbage:

- 1 large head of cabbage

- 1 tbsp salt

- 1 tbsp sugar

- 1 tbsp white vinegar

For the sauce:

- 2 tbsp vegetable oil

- 1 onion, chopped

- 2 cloves garlic, minced

- 1 can (28 oz) crushed tomatoes

- 1 cup beef broth

- 1 tsp sugar

- Salt and pepper to taste

Instructions

- Prepare the cabbage: Remove the tough outer leaves from the cabbage head and blanch the rest in boiling water for 5-7 minutes. Remove the leaves from the water, and let them cool. Once cool, remove the thick stem from each leaf, making it pliable and easy to roll.

- Make the filling: In a large bowl, combine the ground meats, chopped onion, cooked rice, salt, pepper, paprika, cayenne pepper, tomato paste, and parsley. Mix well with your hands or a wooden spoon until just combined.

- Assemble the Holubsti: Lay a cabbage leaf flat, with the stem end facing you. Place about 1/4 cup of the filling in the center of the leaf. Fold the stem end over the filling, then fold in the sides and roll the leaf into a neat package. Repeat with the remaining leaves and filling.

- Cook the Holubsti: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute. Add the crushed tomatoes, beef broth, sugar, salt, and pepper. Bring the sauce to a boil, then reduce the heat to low and simmer for 20-25 minutes.

- Add the Holubsti to the sauce: Carefully place the cabbage rolls in the sauce, seam-side down. Cover the pot and simmer for an additional 20-25 minutes, or until the cabbage is tender and the filling is cooked through.

- Serve and enjoy: Serve the Holubsti hot, garnished with chopped fresh parsley and a dollop of sour cream, if desired.

Tips

i. Use a mixture of ground meats, such as pork, beef, and veal, for added flavor and texture.

ii. Add other ingredients to the filling, like chopped mushrooms, grated carrots, or chopped fresh dill.

iii. Use different types of cabbage, like Savoy or Napa, for a varying texture and flavor.

iv. Serve the Holubsti with mashed potatoes, boiled potatoes, or a side of steamed vegetables.
