Holubsti (Stuffed Cabbage Rolls) Recipe

The Recipe

Ingredients:
For the filling:
- 1 lb ground pork
- 1 lb ground beef
- 1 onion, finely chopped
- 1 cup cooked rice
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 2 tbsp tomato paste
- 2 tbsp chopped fresh parsley
For the cabbage:
- 1 large head of cabbage
- 1 tbsp salt
- 1 tbsp sugar
- 1 tbsp white vinegar
For the sauce:
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 cup beef broth
- 1 tsp sugar
- Salt and pepper to taste
Instructions
- Prepare the cabbage: Remove the tough outer leaves from the cabbage head and blanch the rest in boiling water for 5-7 minutes. Remove the leaves from the water, and let them cool. Once cool, remove the thick stem from each leaf, making it pliable and easy to roll.
- Make the filling: In a large bowl, combine the ground meats, chopped onion, cooked rice, salt, pepper, paprika, cayenne pepper, tomato paste, and parsley. Mix well with your hands or a wooden spoon until just combined.
- Assemble the Holubsti: Lay a cabbage leaf flat, with the stem end facing you. Place about 1/4 cup of the filling in the center of the leaf. Fold the stem end over the filling, then fold in the sides and roll the leaf into a neat package. Repeat with the remaining leaves and filling.
- Cook the Holubsti: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute. Add the crushed tomatoes, beef broth, sugar, salt, and pepper. Bring the sauce to a boil, then reduce the heat to low and simmer for 20-25 minutes.
- Add the Holubsti to the sauce: Carefully place the cabbage rolls in the sauce, seam-side down. Cover the pot and simmer for an additional 20-25 minutes, or until the cabbage is tender and the filling is cooked through.
- Serve and enjoy: Serve the Holubsti hot, garnished with chopped fresh parsley and a dollop of sour cream, if desired.
