Toast Skagen with roe and butter-fried bread is the classic of classics. And this is exactly how a good Skagen stir-fry should be made!
Toast Skagen
· 1.5 kg prawns - in shell
· 1 krm white pepper - freshly ground
· 1 tbsp lemon - squeezed
· 2 krm salt
· 0.5 dl dill - chopped
· 8 discs bread - white
· 150 g whitefish roe
Mayonnaise
· 2 egg yolks
· 0.5 tbspwhite wine vinegar
· 0.5 tbspmustard
· 2.5 dlrapeseed oil
· 2 krmsalt
· 1 krmwhite pepper - freshly ground
Garnish
· sprigs of dill
· lemon wedges
Do this
Mayonnaise: Place the egg yolks in a bowl and add the vinegar and mustard. Whisk together and add the oil, first drop by drop and then in a thin stream, while whisking vigorously. Season with salt and pepper.
Peel the prawns and roughly chop them. Mix the prawns with mayonnaise and season with lemon. Season with salt and pepper and mix in the dill. Read More…
