Pizza night is a regular occurrence in our house and the flavor is constantly changing (though beef and onion does make a frequent appearance!). And so a simply good pizza barely meets our standards.
Sure, we'll eat it and enjoy dinner. But will we make it again? Will we tell our friends and family about it? Will it make an appearance on The Nessy Kitchen?
No.
In order to be worthy of all that, it needs to be excellent!
And well, I'm sharing the recipe so... I guess I'm saying this one is up to the standard.

THE INGREDIENTS

Artisan Pizza Dough- This easy pizza dough requires just 4 ingredients, no kneading and has a chewy texture- I highly recommend making it for your pizza! The batch yields enough for 4 11-inch pizzas so you can either make 4 of these pizzas (the ingredient amounts listed are for one), make a variety of types of pizza or freeze the extra dough for next time.
Coconut Milk- Open a can of full fat coconut milk and stir it together if it has separated. Scoop ¼ cup into a bowl. You can freeze the extra milk for use another time, add it to smoothies or use it in place of milk in baking. Coconut cream can also be used but I don't recommend using low-fat milk as the yellow curry sauce will be too thin.
Yellow Thai Curry Paste- Found in the international section in most grocery stores, this paste is packed with flavour but is not spicy.
Red Bell Pepper- Yellow, orange or green peppers would also work. Slice it thinly for this pizza.
Carrots- I like to use a vegetable peeler to cut the carrots into thin ribbons. You could shred them instead.
Red Onion- White onion could be substituted.
Mozzarella- Use block style fresh mozzarella cheese that you shred yourself- it is best for melting.
