Polish Halupki (Stuffed Cabbage) Recipe
Halupki, also known as stuffed cabbage rolls, is a traditional Polish dish that features cabbage leaves filled with a savory mixture of meat and rice, then simmered in a flavorful tomato sauce. This comforting dish is perfect for family gatherings or a cozy dinner at home. Here’s how to make it:
Ingredients
For the Cabbage Rolls:
- 1 large head of green cabbage
- 1 pound ground beef (or a mix of beef and pork)
- 1 cup cooked rice (white or brown)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika (optional)
- 1 teaspoon dried thyme (optional)
For the Sauce:
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 tablespoon brown sugar (to taste)
- 1 tablespoon vinegar (apple cider or white)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage head.
- Place the whole cabbage in the boiling water for about 2-3 minutes, or until the outer leaves start to soften. Remove the cabbage and let it cool slightly.
- Gently peel off the softened leaves. You will need about 12-15 leaves. If the inner leaves are still too firm, return the cabbage to the boiling water for a few more minutes.
- In a large mixing bowl, combine the ground meat, cooked rice, chopped onion, minced garlic, egg, salt, pepper, paprika, and thyme. Mix well until all ingredients are evenly combined.
- Take a cabbage leaf and place about 2-3 tablespoons of the meat mixture at the base of the leaf. Fold the sides over the filling and then roll it up tightly from the base to the top, similar to a burrito. Repeat with the remaining leaves and filling.
- In a separate bowl, mix together the tomato sauce, diced tomatoes, brown sugar, vinegar, salt, pepper, oregano, and basil.
- Preheat your oven to 350°F (175°C).
- Spread a thin layer of the sauce on the bottom of a large baking dish. Place the stuffed cabbage rolls seam-side down in the dish, packing them tightly together.
- Pour the remaining sauce over the cabbage rolls, ensuring they are well covered.
- Cover the dish with aluminum foil and bake for about 1.5 to 2 hours, or until the cabbage is tender and the filling is cooked through.
