Bolo de Rolo Recipe

Bolo de Rolo, also known as Rolo cake, is a popular Brazilian dessert. This moist and decadent cake is a staple in Brazilian bakeries and is often served at special occasions. In this article, we will guide you through a simple recipe to make a delicious Bolo de Rolo at home.

Ingredients:

1/2 lb (250 gr.) unsalted butter, softened

6 oz. guava jelly (can substitute other jellies or jams)

6 whole eggs

1/2 lb. (250 gr.) cake flour

1/3 lb. (200 gr.) sugar

Granulated sugar for dusting cakes

2 Tbsp. water or white wine for diluting the jam

Instructions:

1. Measure ingredients for the batter and set aside.

2. Prepare the filling. Add guava paste, water, and port, if using, to a non-stick medium pan and bring to a boil over medium-high heat, stirring well until guava paste is fully melted and mixture is homogeneous and smooth. Strain through fine mesh sieve if chunky. Remove from heat, let cool, and divide into 9 portions. Set aside.

3. Prepare the cake batter. In a large mixing bowl, beat the butter and sugar until light and fluffy. Beat in the eggs one at a time, then beat in the flour.

4. Divide the batter into 9 equal portions.

5. Grease three identical baking sheets of approximately 12x18x1 inch (30x45x2 cm) with butter and dust with granulated sugar.

6. Pour one portion of the batter onto each prepared baking sheet and spread evenly to cover the entire surface.

7. Bake in a preheated oven at 375°F (190°C) for 10-12 minutes or until the edges are lightly golden.

8. Remove from the oven and let cool for 2 minutes.

9. Place a clean kitchen towel over each cake and invert onto the towel.

10. Peel off the parchment paper and roll each cake into a tight cylinder.

11. Repeat the process with the remaining batter portions.

12. To assemble the cake, place one cake roll on a serving plate and spread a portion of the guava filling on top.

13. Repeat the process with the remaining cake rolls and filling portions, stacking them on top of each other.

14. Dust the top of the cake with granulated sugar.

Tips:

- To ensure the cake rolls do not break, it is essential to handle them gently and carefully.

- You can substitute the guava paste with other jellies or jams, but the traditional flavor is guava.

- The cake can be stored in an airtight container at room temperature for up to 3 days.
